Fat Fueled Toasted Coconut Bars
4 cups coconut flakes (I used 2 cups flakes and 2 cups shredded)
1 cup melted coconut oil
1/3 cup maple syrup
1 tsp vanilla extract
1/2 tsp salt
1/4 cup Enjoy Life Chocolate Chips
1. Warm a skillet over medium low heat and slowly toast coconut flakes until browned and fragrant.
2. Pour flakes into a bowl and stir in melted coconut oil, maple syrup, vanilla and salt.
3. Press mixture into an 8x8 baking dish lined with parchment paper and refrigerate until firm.
4. Melt chocolate chips over low heat and drizzle over toasted coconut bars. Refrigerate until firm and enjoy!
