I know what you're thinking: Alfredo is NOT a summer dish!
This one is different, I promise. This ultra creamy sauce pairs perfectly with a pile of freshly spiralized zoodles from the garden! What makes it fat fueled? Well I'm glad you asked!
Avocado and almonds are the healthy fat sources used to create this decadent alfredo, but thats not all! Almonds boost this recipes' plant based protein content way up, making it a perfectly balanced meatless meal!
This meal can be enjoyed cold (perfect for summer lunches!) or warm.
Creamy Vegan Alfredo
1/2 cup almonds, soaked 24 hours
1 tbsp garlic powder
1/2 tbsp nutritional yeast
1/2 tsp garlic salt
1/4 tsp pepper
Water for thinning the sauce
1. Drain and rinse the soaked almonds until the water runs clear.
2. Add all ingredients except the water to a food processor and blend on high.
3. Slowly add water to thin the sauce out to desired consistency, preferably creamy.
4. Spoon on top of freshly spiralized zucchini noodles, veggies or pasta of choice and enjoy!
