Fat-Fueled Recipe: Berry Chia Parfait

Chia seeds are nutrient and antioxidant rich seeds that deliver a massive amount of nutrients in a small seed. They expand and soften when combined with liquid, making an excellent vegan egg replacement or natural thickener in many recipes.

 

Chia seeds are rich in antioxidants, fiber and are an excellent source of omega 3 fatty acids and protein. This makes them a superfood powerhouse perfect for those trying to follow a healthy lifestyle. This recipe is super filling due to the amount of healthy fat and protein, so a little will go a long way! Serve this parfait for breakfast, dessert or even as pre-workout fuel!

 

 

Berry Chia Parfait

 

  • 2 cups coconut milk (we love the full fat canned kind, but almond milk works too!)

  • 3/4 cup chia seeds

  • 1/2 tsp vanilla extract 

  • 1 tbsp sweetener of choice or 5 drops of stevia

  • 1 cup  frozen organic berries, thawed (fresh if you have them!)

  • Toppings: shredded coconut, nuts, seeds, cacao nibs or crumbled FATSBAR

 

Directions:

1. Combine milk, sweetener and vanilla together with chia seeds until combined. 

2. Allow mixture to set for 2-4 hours or overnight. 

3. Layer chia pudding, berries and toppings in a glass jar until filled.
