FatFueled Recipe: Fat Bomb Macaroons
We love our fat bombs! In fact, FATSBAR was developed as a mess-free on-the-go fat snack when fat bombs just couldn't get the job done. For those of you who are unfamiliar with fat bombs, they are high-fat, low-carb and low protein snacks that can be used as an immediate fuel source for the body and mind. They are ideal for those trying to incorporate more healthy dietary fat into their diets or individuals trying to meet specific macronutrient goals.
Here is a scrumptious fat bomb recipe we love! It uses avocado, coconut oil and coconut butter, bringing craving crushing MCT’s and monounsaturated fats to the table. These babies are perfect for a midday fuel-up or as a special sweet treat!
Fat-Fueled Recipe: Fat Bomb Macaroons
1 ripe avocado
1/2 cup melted coconut butter
1/4 cup shredded coconut
3 tbsp coconut oil
1/2 tsp vanilla extract
pinch pink himalayan sea salt
Sweetener of choice: 1/4-1/2 tsp stevia for a low-carb option, 3-4 tbsp maple syrup, honey-whatever floats your boat.
1 oz dark chocolate
1/2 tbsp coconut oil
Mash together avocado, coconut butter and coconut oil until blended. Add vanilla, salt and sweetener of choice to taste. NOTE: It is best to start with a small amount of sweetener, mix and taste your “batter” before adding more.
Place bowl of “batter” into the fridge until firm but scoopable, 30-60 minutes. While batter is chilling, melt dark chocolate and coconut oil together until liquid.
Remove batter from fridge and spoon by rounded tablespoon (or melon baller like me) onto a plate covered in parchment paper.
Drizzle chocolate sauce over macaroons and keep chilled in the fridge until ready to serve!
